Stepping into The Park is like stepping back in time; a mix of Victoriana, 1950’s and modern-day Britain. Locally sourced ingredients, freshly baked scones, barista coffees and a five-course tasting menu – food and drink here is all about delicious, simple pleasures - and it's divine.
TRYST is our fine eating restaurant. The five-course tasting menu, developed by head chef, Ryan is inspired by the great Scottish larder. Guests can begin the evening with our signature 1881 Gin Elderflower cocktail before tucking into the first course; fresh langoustines. Don't worry veggies we haven't forgotten about you - Ryan has also developed a vegetarian five-course menu for you to enjoy, using local, foraged produce where possible.
Changing with the seasons and using only the best Scotland has to offer, TRYST is the perfect place to celebrate a special occasion or simply enjoy a wonderful dining experience.
Why not make a weekend of it and book onto our overnight package?
Friday and Saturday only at 7:00pm.
Just so you know all Tryst bookings need to be booked one week in advance.
The furnishings are local, we’ve used materials from the March Street Mills to give you a sense of Peebles’ rich history in textiles. The pictures on the wall trace the old house back to its original owner Henry Ballantyne; brother of David Ballantyne, who established the Mills in 1884. Not only are the benches upholstered in tweed patchwork salvaged from the mills, but you’ll also spot some throwback keepsakes including a vintage sewing machine and a poster describing the Cotton Mills and Factories Act.

Start the day with a delicious Scottish breakfast before heading out for a day of exploring the local area.
Open daily: For breakfast only from 8:00am
Woven into Scottish history and culture, milling of a bygone era is at the heart of what we do at The Park. Inspired by all things textile, we wanted to pay homage to the Scottish flour mills by creating a tempting bakery menu. Make yourself comfortable or grab a bite to go – take your pick – we’re open all day from 10:00am. Start your day with the smell of slow-roasted, fair trade coffee.
Daily: 10:00am - 4:00pm
Brunch served daily: 10:00am - 12:00pm
Just a daunder up the road and you'll find our sister hotel, Peebles Hydro. Head Chef Grant’s seasonal menus are bursting with local Borders produce, some of which we grow right there in the gardens. Truly, Peebles on a plate. We brew our own beer on the grounds and 1881 Gin is always on hand from our bars and restaurants. Just the ticket. Little ones we haven’t forgotten about you, we’ve got all of your favourites too.
Our Head Chef, Grant, has been busily preparing your feast. Expect familiar, filling favourites, and he’s a dab hand at adding interesting twists to the plate and palette. You’ll find the menu packed full of ingredients sourced from right here in Scotland’s larder – and lots of the veggies come straight from our very own gardens. So naturally, there are plenty of vegetarian options, as well as your favourites straight from the grill.
The restaurant is also the home of ginormous breakfasts. Where sausages, eggs, bacon and more are munched happily in the morning, with light flooding through towering windows.
